These red boxes contain the Chinese delicacy we all enjoy during Chinese New Year: tikoy or nian gao. Made with glutinous rice flour, wheat starch, salt, water, and sugar, this rice cake symbolizes good fortune in all aspects of life and the promise of a better year. Filipinos coined the word tikoy from the Hokkien word 甜粿 (ti-ke), which literally meant ‘sweet cake.’ Tikoy is often cooked by slicing it into bite-size pieces, dipping it in beaten eggs, then frying them.
