Another classic street food favorite made from grilling pig or chicken intestines. You know what intestines hold, right?
Ah, even the usually grumpy Anthony Bourdain was smitten by this. It’s insanely expensive and looks ridiculous, with a whole pig in a giant skewer. Yet it is extremely delicious–especially that crispy skin. It’s to die for. Literally.
Made by simmering pork legs, then deep-frying until its skin gets very crunchy, the Crispy Pata is another pulutan we cannot live without, yet cannot live longer with.
Made from non-essential parts of a pig, like head, snout and liver(God knows, what else is in there)—this quintessential Pinoy dish is the perfect partner for a bottle of San Mig. It is high in cholesterol and sodium–recipes for hypertension and spike in blood-sugar levels. But hey, you only live once.
