Manam’s Crispy Sisig Meets A Mano’s Pizza in This New Collab

Have you ever had a friendship pizza? That’s exactly how Abba Napa, co-founder of The Moment Group, describes Manam’s first-ever collaboration, a team-up with none other than A Mano, Amado Forés’ homegrown Italian favorite. To anyone who’s familiar with the two brands, the pairing makes perfect sense.
Napa and Forés are great friends, so a collaboration between their restaurants was bound to happen eventually. The result is Ciao, Paboritos!, a limited-edition menu that brings together Manam’s distinctly Filipino flavors and A Mano’s Italian sensibilities.
For The Moment Group co-founder Eli Antonino, the collaboration is also a tribute to someone who has always been part of their shared story: the late Filipino chef and restaurateur Margarita Forés, Amado’s mother. “There’s someone up there who’s always whispering in our ears. Every time the four of us are together, we always remember her. And this is an ode to her,” Antonino shares.
The collaboration brings two very different but surprisingly complementary flavors together: Manam’s crispy sisig on pizza and ube sago with A Mano’s burrata gelato soft serve.
Here’s what to expect:

First up is the Crispy Sisig Pizza (P745), which takes Manam’s beloved House Crispy Sisig and gives it an Italian makeover.
It starts with soft, chewy homemade pizza dough layered with A Mano’s guanciale strips, sisig aglio sauce, Fior di Latte, and Pecorino Romano. It’s then topped with pickled onion and green finger chili for a hit of acidity and spice. On the side, you get A Mano’s chili oil and fresh lemon zest, which help cut through all that rich, savory goodness.

The combination works better than it probably has any right to. You get the crunch of the crispy sisig, the chew of the pizza dough, the salty richness of the cheeses, and just enough heat from the chili. And yes, we wouldn’t blame you for polishing off three slices in one sitting.
For dessert, the collaboration takes another Filipino favorite—ube sago—and pairs it with A Mano’s signature burrata gelato soft serve. The result is the Ube Sago Burrata Soft Serve, which combines the rich, creamy, buttery flavor of the burrata gelato with the subtle tang of mozzarella. Manam’s sweet ube and sago topping adds a distinctly Filipino touch (and is an ode to the restaurant’s ube sago shake), while the sago gives every spoonful a satisfying bit of chew. You can get it in a Housemade Waffle Bowl (P365) or a cup (P315).
